Ingredients: (For 4-5 People)
- 1 medium chicken (about 1.5kg; it’s best to choose a pullet that’s about to lay)
- Pho (dry noodle soup; or wet noodle soup)
- Some vegetables to eat together such as: spicy basil, cilantro, coriander, bean sprouts…etc.
- Fresh lemon, chili
- 2-3 dried purple onions
- 1 medium onion, green onion, cilantro root
- Anise, coriander, ginger, cardamom, cinnamon, black pepper (if you can eat spicy)
- Spices to taste food
Instructions:
Step 1: Prepare Ginger, Onion, Purple Onion
Grilled ginger and onion, dried red onion with the skin on for aroma; then peel and wash. Ginger is crushed; and sliced onions.
Step 2: Clean the Chicken
Use salt and ginger to coat both the inside and outside of the chicken; then rinse.
Step 3: Prepare to Boil the Chicken
Put the chicken in the pot, cover the chicken with water; Continue to add the roasted cilantro roots, onions and ginger to the pot, and at the same time add a little sea salt and 1 small rock sugar.
Step 4: Boil the Chicken and Filter the Meat
Boil chicken broth; When the water boils, if bubbles appear, use a spoon to skim off the foam until the foam is gone. After that, simmer for about 15 minutes, then turn off the stove; Wait for the water to cool down before taking out the chicken. Then cover the chicken with a towel to let the water seep into the chicken, making the chicken tender and delicious. When the chicken has cooled down, remove the towel and strain the chicken. Chicken thighs cut into bite-sized pieces; chicken breast cut into pieces or shredded according to preference; Continue to put chicken bones in a pot of boiling broth and simmer for about 45 minutes.
